Christmas in Morelia
We left Ajijic on Saturday morning to visit our friends in Morelia. When we got there after a 4-hour drive, we had lunch in a very different type of restaurant. The chickens and ribs were staked and barbequed in an open pit. Our Christmas diner was spent with our wonderful Mexican family in their home at midnight, Christmas Eve. The dinner was a chicken dish that was a special Mexican treat. Omar and I went out on the road, with our sharpened machete to find some cactus leaves. After spying the right cactus I held back the barbed wire as Omar went in to cut the leaves. These leaves were washed and placed into a pot, which was filled with chicken pieces and a special sauce. The pot was then lowered into a pit with glowing embers for four hours. The whole pit was covered in clay to ensure that no heat could escape, it was delicious!
